SALADS
(Serves 4)

1 kg (2 lbs 3 oz) lettuce
2 medium size cucumbers
3 greenings (green-skinned apples)
4 tablespoons balsamic vinegar
3 tablespoons olive oil
10 prunes without stones
Salt

1. Wash and chop the lettuce; drain thoroughly and place in a salad bowl or dish. Wash the cucumbers carefully and use a cheese-grater to grate into thick pieces over the lettuce without removing their skins. Sprinkle the grated cucumber with salt.
2. Follow the same process in grating the greenings. Mix with the lettuce and cucumber and add the vinegar.
3. Cut each prune into four small pieces and place on top. This salad is the perfect side dish for roast meat or fish.
